*Note* The recipes I post here are adjusted for the Power Pressure Cooker XL. You may need to adjust if you have an Instant Pot or other electric pressure cooker.
Ingredients
- 2lb center cut pork loin
- ~2-4 tablespoons olive oil
- 2 cup apple cider
- 1 medium onion, sliced
- 2 apples, cored & sliced
- 1 tablespoon sea salt
- 1 tablespoon pepper
- 1 tablespoon minced dry onion
- Season the pork loin with salt, pepper, & minced dry onions
- Heat olive oil in a cast iron skillet
- Sear the pork loin on all sides in skillet
- Press Chicken/Meat button, add olive oil to inner pot.
- Sautee onions in pot
- Add all remaining ingredients & pork loin to pot
- Place the lid on the cooker, lock the lid & make sure pressure release valve is closed
- Press CANCEL button
- Press CHICKEN/MEAT button, then TIME ADJUSTMENT to 30 minutes*
- Once timer reaches 0 hit CANCEL, release pressure, open.
- Serve with apple & onion mixture from pot.
